The Wolf, Goat, Cabbage problem and the N-Jugs problem are examples of planning problems. The MiniZinc code that we went over in class is linked to here. 

The MiniZinc documentation mostly likely won't include anything regarding planning problems, as they are just a type of logic problem, and not something specific to MiniZinc as a language.
