I would just like the ability to discuss it further in class or a lab session. Perhaps time in class to work on it and ask questions

Honestly speaking, how lab 1 due was perfect. We had one week from the wednesday + 3 days to do it allowing us to turn it in on the friday of the following week giving us plenty of time to work around our schedule and give us time to work on it while allowing us to focus on other classes.

I know this is asking too much so how about due date postponed to Wednesday? (although friday is preferred)

I agree with both anons, the "assigned wednesday and due friday" system seemed to work fine.

It does feel like a long timeframe but I think it's necessary for fully understanding what we're doing, and making sure we do it correctly, and still having the chance of getting our work reviewed.

I'll be happy to set the due date to whatever time will help you learn the material better. I've set it for this Tuesday so that it doesn't run into this week's lab time. I don't want you to use the lab in week n for the assignment from week n-1.

Also, why haven't I seen any questions on the forum? If you are confused about something, post a question. The forum silence (and sudden last-day request for an extension) suggests you haven't been working on it rather than that you've been working hard and just haven't finished yet.
