Which countries should not be selected? And what age rating should I choose for successful sertifying?

I select all English speaking countries.  Sam recommended 12+ as the age rating.

Yes, select the English speaking countries, UNLESS you can create another app just for another country's language, for example India has a number of languages in the list (or so I have been told, let me know it that isn't true! Or tell me the number if it is n greater than 1.
